Baked Veggie Frittata

A fluffy, golden baked frittata packed with colourful vegetables. High in protein, easy to bake ahead, and delicious warm or cold.

Why this works on GLP-1

A frittata turns a handful of eggs into a proper, sliceable meal, and eggs are one of the simplest complete proteins. That is exactly what you want on GLP-1 medication, where appetite is lower and getting protein in early helps protect lean muscle during weight loss. A spoon of cottage cheese or a little grated cheese in the mix lifts the protein further.

Baking rather than frying keeps it hands-off and lets you load it with vegetables for fibre and colour. Best of all, it is made for preparing ahead: bake it once, chill it, and you have grab-and-go breakfasts or lunches ready for several days.

Ingredients · makes 1 generous serving

  • EggsLarge 3
  • Cottage cheeseStirred through the eggs · lifts protein and keeps it moist 60 g
  • PeppersDiced 60 g
  • Courgette or spinachDiced courgette, or a handful of spinach 60 g
  • Cherry tomatoesHalved 60 g
  • Spring onionSliced 2
  • Avocado oilFor the pan and dish · high smoke point 1 tsp
  • Herbs and pepperOregano or chives, black pepper, easy on salt to taste
  • To finish, optionalA little grated cheese or crumbled feta on top to taste

Method

  1. Soften the vegetables. Heat the oven to 190°C (375°F). Warm 1 tsp of avocado oil in an ovenproof pan over medium heat and soften the peppers, courgette, and spring onion for 3 to 4 minutes. Add the spinach, if using, until wilted.

  2. Mix the eggs. Whisk the eggs with the cottage cheese, herbs, and black pepper until well combined.

  3. Combine and add tomatoes. Pour the egg mixture over the vegetables in the pan, stir once to distribute, then dot the cherry tomatoes over the top. Add optional cheese.

  4. Bake. Transfer the pan to the oven (or tip everything into an oiled baking dish first) and bake for 18 to 22 minutes, until set, puffed, and golden.

  5. Serve. Let it settle for a couple of minutes, then slice. Eat warm or cold, and slowly, to gauge fullness on a reduced appetite. It keeps well chilled for three days.
