- Chicken frankfurters Choose a high-meat-content option 2 · about 100 g
- Eggs Fried until the whites are fully set 2 large
- Mixed salad leaves Rocket, spinach or baby leaf mix 60 g
- Cucumber Sliced ½ small
- Cherry tomatoes Halved 6
- Red pepper Thinly sliced ¼ small
- Olive oil For frying the eggs 1 tsp
- Lemon juice or light vinaigrette For the salad 1 tbsp
- Black pepper To finish to taste

Cook the frankfurters. Prepare them according to the packet instructions until piping hot throughout.

Fry the eggs. Heat the olive oil in a non-stick pan. Add the eggs and cook until the whites are fully set and the yolks are cooked to your liking.

Prepare the salad. Arrange the salad leaves, cucumber, tomatoes and red pepper on a plate.

Dress the salad. Add lemon juice or a light vinaigrette and season with black pepper.

Serve. Add the cooked frankfurters and fried eggs to the plate and serve immediately.
