Cottage Cheese Pancakes

Ingredients · makes 1 serving
- Cottage cheesePlain 200 g
- EggsLarge 2
- Rolled oatsBlend to a flour, or use oat flour 40 g
- Mixed berriesFresh or frozen, to top 80 g
- Avocado oilA little, for the pan 1 tsp
- OptionalVanilla, cinnamon, a little sweetener, or baking powder for lift to taste
Method
Blend the batter. Add the cottage cheese, eggs, oats, and any vanilla, cinnamon, or a pinch of baking powder to a blender. Blend until smooth, then let it sit for a couple of minutes to thicken.
Fry the pancakes. Warm a little avocado oil in a non-stick pan over medium heat. Spoon in small rounds of batter and cook for 2 to 3 minutes, until bubbles form on top and the underside is golden.
Flip and finish. Flip carefully and cook for another 1 to 2 minutes, until set and golden. Repeat with the remaining batter, keeping cooked pancakes warm.
Serve. Stack the pancakes and top with the berries. Add a little extra cinnamon or a small drizzle of honey if you like, and eat slowly to gauge fullness on a reduced appetite.
