Egg White & Turkey Bacon Omelette

A lean, high-protein breakfast that is light on calories and big on flavour. A fluffy egg white omelette filled with turkey bacon, spinach, and tomatoes, ready in under ten minutes.

Ingredients · makes 1 serving

  • Egg whitesCarton whites, or the whites of about 6 eggs 200 ml
  • Turkey baconLean rashers 2 rashers
  • SpinachFresh, roughly chopped 50 g
  • TomatoesDiced, or halved cherry tomatoes 80 g
  • Avocado oilFor the pan · high smoke point 1 tsp
  • Black pepper and saltGo easy on salt, the bacon is salty to taste
  • To finish, optionalChives, chilli flakes, or a little hot sauce to taste

Method

  1. Cook the turkey bacon. Warm a non-stick pan over medium heat with a little of the avocado oil. Cook the turkey bacon for 2 to 3 minutes per side, until crisp at the edges. Remove, then chop or leave whole.

  2. Wilt the veg. In the same pan, add the spinach and tomatoes and cook for a minute or two, until the spinach wilts and the tomatoes soften.

  3. Scramble the egg whites. Season the egg whites with black pepper, pour them into the pan, and stir gently over low to medium heat until just set and fluffy, taking care not to overcook.

  4. Combine and serve. Fold the turkey bacon back through, or lay it alongside. Finish with chives, chilli flakes, or hot sauce, and eat slowly to gauge fullness on a reduced appetite.
