High-Protein Breakfast Pizza
A crisp wholewheat tortilla topped with cottage cheese, egg, egg whites, spinach and tomatoes. A satisfying breakfast pizza with approximately 42 grams of protein.

Cottage cheese, egg and egg whites provide a substantial amount of protein without relying on a heavy layer of cheese or processed meat. The tortilla creates a thin, crisp base, keeping the portion more manageable than a traditional pizza.
Spinach, tomatoes and peppers add fibre, colour and freshness. Cutting the pizza into smaller slices can also encourage slower eating and make it easier to pause as fullness develops. Start with two slices and return to the remainder only if you are still comfortably hungry.

Ingredients · makes 1 serving
- Wholewheat tortilla Use one medium tortilla as the pizza base 1 medium
- Cottage cheese Use a thick cottage cheese and drain excess liquid if needed 150 g
- Egg whites Carton egg whites or whites from approximately three eggs 100 g
- Whole egg Added to the centre of the pizza 1 large
- Baby spinach Roughly chopped 40 g
- Cherry tomatoes Halved 5
- Red pepper Finely diced ¼ small
- Tomato purée Mixed with a little water for the base 1 tbsp
- Dried herbs Oregano, basil or Italian seasoning ½ tsp
- Seasoning Black pepper and a small pinch of salt to taste

Preheat the oven. Heat the oven to 200°C, 180°C fan or gas mark 6. Line a baking tray with baking paper.

Prepare the base. Place the tortilla on the baking tray. Mix the tomato purée with 1 teaspoon of water and spread it thinly over the tortilla, leaving a small border.

Prepare the cottage cheese topping. Add the cottage cheese and egg whites to a bowl. Season with dried herbs and black pepper, then mix until combined.

Add the toppings. Spread the cottage cheese mixture over the tortilla. Add the spinach, tomatoes and diced pepper, leaving a small space in the centre.

Add the egg. Crack the whole egg into the space in the centre of the pizza. Season lightly with black pepper.

Bake the pizza. Bake for 10 to 14 minutes, until the tortilla edges are crisp, the cottage cheese topping is hot and the egg white is fully set.

Check the egg. If the egg white is not completely cooked, return the pizza to the oven for another 1 to 2 minutes.

Slice and serve. Allow the pizza to cool for 2 minutes, then cut it into four slices. Eat slowly and save any remaining slices for later if needed.
