Smoked Salmon & Scrambled Eggs on Toast

A classic, high-protein breakfast that feels a little special. Soft scrambled eggs, silky smoked salmon, and wholemeal toast, ready in under ten minutes.

Why this works on GLP-1

Eggs and smoked salmon are both excellent protein sources, and together they stack up to a serious protein hit in a small, gentle portion. That is exactly what you want on GLP-1 medication, where appetite is lower but protein remains important for protecting lean muscle during weight loss. The salmon also brings omega-3 fats.

Wholemeal toast adds a little fibre and makes it a satisfying plate without much bulk. One thing to note: smoked salmon is high in salt, so you will not need to add much, if any, extra seasoning.

Ingredients · makes 1 serving

  • EggsLarge 3
  • Smoked salmonSliced 50 g
  • Wholemeal breadFor toast 1 slice
  • Butter or avocado oilA little, for the eggs 1 tsp
  • Black pepperGo easy on salt, the salmon is salty to taste
  • To finish, optionalChives, dill, a squeeze of lemon to taste

Method

  1. Whisk the eggs. Crack the eggs into a bowl, season with black pepper, and whisk until smooth. Toast the bread now so it is ready.

  2. Scramble gently. Melt the butter or warm a little avocado oil in a non-stick pan over low to medium heat. Add the eggs and stir slowly and continuously, taking them off the heat while still slightly soft, since they keep cooking.

  3. Assemble. Pile the scrambled eggs onto the toast, drape the smoked salmon over the top, and finish with chives, dill, or a squeeze of lemon. Eat slowly to gauge fullness on a reduced appetite.
