Beef Meatballs
Tender homemade beef meatballs simmered in a rich tomato sauce. High in protein, comforting, and easy to portion for a smaller appetite.

Ingredients · makes 1 serving
- Lean beef mince5% fat for the leanest option 150 g
- EggTo bind · a small beaten egg, or half a large one 1 small
- PassataOr tinned chopped tomatoes 150 g
- Onion and garlicFinely chopped, for the sauce ½ · 1 clove
- Dried herbsOregano, basil, or Italian mixed herbs 1 tsp
- Avocado oilFor browning · high smoke point 1 tsp
- Salt and pepperTo taste to taste
- To finish, optionalFresh basil, a little grated parmesan to taste
Method
Make the meatballs. In a bowl, mix the beef mince with the beaten egg, half the herbs, salt, and pepper. Roll into small, even meatballs, about six to eight.
Brown them. Heat 1 tsp of avocado oil in a pan over medium-high heat. Brown the meatballs all over for 4 to 5 minutes, turning gently. They do not need to be cooked through yet. Remove and set aside.
Make the sauce. In the same pan, soften the onion for 3 to 4 minutes, add the garlic and remaining herbs, then pour in the passata. Season and bring to a gentle simmer.
Simmer together. Return the meatballs to the sauce and simmer for 12 to 15 minutes, until cooked through and the sauce has thickened. Turn them once or twice so they cook evenly.
Serve. Finish with fresh basil or a little parmesan, and serve with your choice of pasta, rice, or vegetables. Eat slowly to gauge fullness on a reduced appetite.
