Beef Stuffed Aubergine
Roasted aubergine halves filled with rich, savoury beef in tomato sauce. High in protein, low in carbs, and a satisfying way to get more veg on the plate.
Why this works on GLP-1
Lean beef mince is protein-dense and rich in iron and B12, so these stuffed aubergines carry a strong protein total while staying light. On GLP-1 medication that matters, since appetite is lower but protein needs stay high to help protect lean muscle during weight loss.
The aubergine acts as a soft, roasted vessel, adding fibre and volume so the meal feels generous without a heavy carbohydrate load. It looks and feels like a proper dinner, which helps on days when appetite needs a little coaxing, and it reheats well for the next day.

- To finish, optionalA little grated cheese, fresh basil, or a spoon of Greek yoghurt to taste
Method
Roast the aubergine. Heat the oven to 200°C (400°F). Halve the aubergine lengthways and scoop out some of the centre to make boats, keeping the scooped flesh. Brush the halves with a little avocado oil and roast for 20 minutes, until softened.
Make the filling. Meanwhile, heat 1 tsp of avocado oil in a pan over medium heat. Soften the onion for 3 to 4 minutes, add the garlic and the chopped aubergine flesh, then the beef mince, breaking it up and cooking until browned.
Add the sauce. Stir in the herbs and passata, season, and simmer for 5 minutes until thickened into a rich filling.
Fill and bake. Spoon the beef filling into the roasted aubergine boats. Return to the oven for 15 to 20 minutes, until hot and bubbling. Add optional cheese for the last few minutes if using.
Serve. Finish with fresh basil or a spoon of Greek yoghurt, and eat slowly to gauge fullness on a reduced appetite.
