Chicken Curry

A fragrant, lightly spiced chicken curry in a tomato and yoghurt sauce. High in protein, warming, and comforting, with all the flavour and none of the heaviness.

Chicken breast carries a strong protein total in a modest portion, which matters when appetite is lower and protein helps protect lean muscle during weight loss. Ingredients · makes 1 serving

  • Chicken breastDiced into chunks 160 g
  • Chopped tomatoesTinned, or passata 150 g
  • Greek yoghurt0% · stirred in at the end for creaminess 2 tbsp
  • Onion and garlicChopped, plus grated ginger ½ · 1 clove · 1 tsp
  • Curry spicesGaram masala, cumin, turmeric, paprika, or a curry powder 1 to 2 tsp
  • Rice, dryTo serve · or cauliflower rice to lower carbs 60 g
  • Avocado oilFor frying · high smoke point 1 tsp
  • To finish, optionalFresh coriander, a squeeze of lemon, a handful of spinach to taste

Method

  1. Cook the rice. Cook the rice according to the packet instructions so it is ready to serve with the curry.

  2. Build the base. Heat 1 tsp of avocado oil in a pan over medium heat. Soften the onion for 4 to 5 minutes, then add the garlic, ginger, and curry spices and cook for a minute until fragrant.

  3. Brown the chicken. Add the diced chicken and cook for 4 to 5 minutes, stirring, until sealed on all sides.

  4. Simmer the sauce. Pour in the chopped tomatoes, season, and simmer for 10 to 12 minutes, until the chicken is cooked through with no pink remaining and the sauce has thickened. Stir a handful of spinach through at the end if using.

  5. Finish and serve. Take the pan off the heat and stir in the Greek yoghurt for a creamy finish, which keeps it lighter than cream. Serve with the rice, scatter over coriander, and eat slowly to gauge fullness on a reduced appetite.
