Garlic Prawn Stir Fry

Juicy prawns tossed with garlic, ginger, and crisp vegetables over noodles. High in protein, low in calories, and on the table in fifteen minutes.

They also cook in minutes, so this is a genuinely fast dinner.

Garlic and ginger bring big, fragrant flavour with no added calories, and a mix of crisp vegetables adds fibre and colour. Keeping the sauce light lets the prawns and aromatics shine while avoiding the sugar and salt of many bottled sauces, for a fresh, satisfying plate.

Ingredients · makes 1 serving

  • King prawnsRaw or cooked, peeled 160 g
  • Mixed vegetablesA ready stir-fry pack, or peppers, mangetout, pak choi 150 g
  • NoodlesEgg, rice, or wholewheat, cooked 70 g dry
  • Garlic and gingerPlenty of both · minced and grated 2 cloves · 1 tbsp
  • Soy sauce and limeLow-sodium soy, plus a squeeze of lime 1 tbsp · ½ lime
  • Avocado oilFor the high-heat stir fry · high smoke point 1 tsp
  • To finish, optionalChilli flakes, spring onion, coriander, sesame seeds to taste

Method

  1. Cook the noodles. Prepare the noodles according to the packet instructions, then drain and set aside.

  2. Fry the aromatics. Heat 1 tsp of avocado oil in a wok or large pan over high heat. Add the garlic and ginger and stir-fry for 30 seconds, until fragrant but not browned.

  3. Cook the prawns and veg. Add the prawns and vegetables and stir-fry for 3 to 4 minutes. Raw prawns are done when pink and opaque; if using cooked prawns, add them near the end just to heat through.

  4. Toss and serve. Add the noodles, soy sauce, and a squeeze of lime, and toss for a minute until hot and coated. Finish with chilli, spring onion, or coriander, and eat slowly to gauge fullness on a reduced appetite.
