Lemon Herb Chicken

Ingredients · makes 1 serving
- Chicken breastOne skinless fillet 150 g
- New potatoesHalved if large 150 g
- Green beansTrimmed 100 g
- LemonHalf, juiced, plus a little zest 1/2
- Dried or fresh herbsThyme, oregano, or mixed herbs 1 tsp
- Olive oilFor cooking 1 tsp
- Garlic, optionalMinced 1 clove
- Salt and pepperTo taste to taste
Method
Boil the potatoes. Add the new potatoes to a pan of salted water, bring to the boil, and simmer for 12 to 15 minutes, until tender to the point of a knife.
Marinate the chicken. While they cook, mix the lemon juice and zest, herbs, garlic, olive oil, salt, and pepper. Coat the chicken breast in the mixture. If it is thick, butterfly it or press it thinner so it cooks evenly.
Cook the chicken. Heat a pan over medium-high heat and cook the chicken for about 5 to 6 minutes per side, until golden and cooked through with no pink remaining. Rest for a couple of minutes before slicing.
Steam the beans and plate up. Steam or boil the green beans for 3 to 4 minutes, until just tender. Serve the sliced chicken with the potatoes and beans, and a squeeze more lemon over the top. Eat slowly to gauge fullness on a reduced appetite.
