Beef Stroganoff
A lighter take on the classic: tender strips of beef and mushrooms in a silky crème fraîche sauce. Rich, comforting, and high in protein.
Why this works on GLP-1

- Lean beefSirloin or rump, sliced into thin strips 150 g
- MushroomsSliced 100 g
- Light crème fraîcheFor the sauce 2 tbsp
- Onion and garlicFinely sliced ½ · 1 clove
- Beef or vegetable stockTo loosen the sauce a splash
- Dijon mustard and paprikaFor flavour and colour 1 tsp each
- Avocado oilFor frying · high smoke point 1 tsp
- Asparagus, optionalTrimmed and halved · adds fibre and colour to taste
- To finish, optionalFresh parsley, black pepper to taste
Method
Sear the beef. Heat 1 tsp of avocado oil in a pan over high heat. Add the beef strips in a single layer and sear for 1 to 2 minutes, until just browned. Remove and set aside so it stays tender.
Cook the vegetables. Lower the heat, add the onion and mushrooms (and asparagus, if using), and cook for 4 to 5 minutes until softened and any liquid has cooked off. Add the garlic and paprika for the last minute.
Make the sauce. Stir in the Dijon mustard and a splash of stock, then lower the heat and stir through the light crème fraîche until you have a silky sauce. Do not let it boil hard, so it stays smooth.
Combine and serve. Return the beef and any resting juices to the pan and warm through for a minute. Season, finish with parsley, and serve with a small portion of rice, pasta, or vegetables. Eat slowly to gauge fullness on a reduced appetite.
