Mexican Turkey Bowl

- Rice, dryWhite or brown · or cauliflower rice to lower carbs 70 g
- Black beansTinned, drained and rinsed 100 g
- SalsaFresh or from a jar, to top 2 tbsp
- AvocadoSliced or diced ¼
- Mexican spicesCumin, paprika, chilli powder, garlic 1 to 2 tsp
- Avocado oilFor frying · high smoke point 1 tsp
- To finish, optionalLime, fresh coriander, a spoon of Greek yoghurt to taste
Method
Cook the rice. Cook 70 g of rice according to the packet instructions so it is ready when the turkey is.
Brown the turkey. Heat 1 tsp of avocado oil in a pan over medium-high heat. Add the turkey mince, break it up, and cook for 5 to 6 minutes until no longer pink. Stir in the Mexican spices and cook for another minute until fragrant.
Warm the beans. Add the black beans to the pan with a splash of water and warm through for 2 to 3 minutes, letting them take on the spices.
Build the bowl. Spoon the rice into a bowl, add the spiced turkey and beans, then top with salsa and avocado. Finish with lime, coriander, or a spoon of Greek yoghurt, and eat slowly to gauge fullness on a reduced appetite.
