Moroccan Chicken
A warmly spiced one-pan dinner of chicken and chickpeas in a rich tomato sauce. High in protein and fibre, deeply flavoured but light on the stomach.

Ingredients · makes 1 serving
- Chicken breast or thighSkinless, cut into chunks 150 g
- ChickpeasTinned, drained and rinsed 120 g
- PassataOr tinned chopped tomatoes 150 g
- Onion and garlicFinely chopped ½ · 1 clove
- Moroccan spicesCumin, coriander, cinnamon, paprika, or a ras el hanout blend 1 to 2 tsp
- Avocado oilFor frying · high smoke point 1 tsp
- To finish, optionalFresh coriander, a squeeze of lemon, a spoon of Greek yoghurt to taste
Method
Brown the chicken. Heat 1 tsp of avocado oil in a pan over medium-high heat. Season the chicken and brown it for 3 to 4 minutes, until coloured on the outside. Remove and set aside.
Build the base. Lower the heat, add the onion, and soften for 3 to 4 minutes. Add the garlic and Moroccan spices and cook for a minute until fragrant, which deepens their flavour.
Simmer. Pour in the passata and stir in the chickpeas. Return the chicken to the pan, bring to a gentle simmer, and cook for 12 to 15 minutes, until the chicken is cooked through with no pink remaining and the sauce has thickened.
Finish and serve. Taste and adjust the seasoning. Serve as it is, or with a small portion of couscous or rice, and top with coriander, lemon, or a spoon of Greek yoghurt. Eat slowly to gauge fullness on a reduced appetite.
