- Pork tenderloinTrimmed of any silverskin 170 g
- Sweet potatoPeeled and cut into chunks 200 g
- BroccoliCut into florets 100 g
- Avocado oilFor roasting · high smoke point 1 tsp
- SeasoningGarlic, paprika, thyme or rosemary, salt and pepper to taste
- To finish, optionalA little wholegrain mustard, lemon, or fresh herbs to taste
Method
Start the sweet potato. Heat the oven to 200°C (400°F). Toss the sweet potato chunks with a little avocado oil and seasoning, spread on a tray, and roast for 10 minutes to give them a head start.
Sear the pork. Season the tenderloin. Sear it in a hot pan with a little avocado oil for 1 to 2 minutes on each side, until browned, which builds flavour before roasting.
Roast together. Add the pork and the broccoli to the tray with the sweet potato. Roast for 15 to 18 minutes, until the pork is just cooked through and the vegetables are tender. Pork tenderloin is best served slightly blushing and juicy, not dry.
Rest and serve. Rest the pork for 5 minutes, then slice thickly. Serve with the roasted vegetables and a little wholegrain mustard or lemon. Eat slowly to gauge fullness on a reduced appetite.
