Roasted Chicken, Halloumi & Vegetables

A vibrant one-tray dinner of golden chicken, charred halloumi, and roasted vegetables. High in protein, colourful, and about as easy as cooking gets.

Why this works on GLP-1

Pairing lean chicken with a smaller portion of halloumi gives you a big, satisfying protein total while keeping the meal balanced. The chicken does most of the protein work, so the halloumi can be used more as a flavourful accent. Ingredients · makes 1 serving

  • Chicken breastSkinless, cut into chunks 120 g
  • HalloumiCubed · used as a flavourful accent 60 g
  • Baby potatoesHalved 120 g
  • CourgetteThickly sliced 80 g
  • PeppersAny colour, chunky pieces 80 g
  • Avocado oilFor roasting · high smoke point 1 tsp
  • SeasoningPaprika, oregano, garlic, black pepper, easy on salt to taste
  • To finish, optionalLemon, fresh herbs, chilli flakes to taste

Method

  1. Start the potatoes. Heat the oven to 200°C (400°F). Toss the halved baby potatoes with a little avocado oil and seasoning, spread on a tray, and roast for 10 minutes to give them a head start, as they take longest.

  2. Add the chicken and veg. Add the chicken chunks, courgette, and peppers to the tray with the rest of the avocado oil and seasoning. Toss together and roast for another 15 minutes.

  3. Add the halloumi. Scatter the halloumi cubes over the tray and roast for a final 8 to 10 minutes, until the halloumi is golden, the chicken is cooked through with no pink remaining, and the vegetables are tender and charred at the edges.

  4. Serve. Finish with a squeeze of lemon, fresh herbs, or chilli flakes, and eat slowly to gauge fullness on a reduced appetite.
