Salmon Stir Fry

A quick, colourful stir fry with flaky salmon, crisp vegetables, and rice noodles. High in protein and omega-3, on the table in about fifteen minutes.

Ingredients · makes 1 serving

  • Salmon filletSkinless, cut into chunks 150 g
  • Mixed vegetablesA ready stir-fry pack, or your own mix 150 g
  • Rice noodlesCooked to serve 1 nest (about 60 g dry)
  • Soy sauceLow-sodium, for the sauce 1 tbsp
  • Garlic and gingerMinced or grated 1 clove · 1 tsp
  • Avocado oilFor the high-heat stir fry · high smoke point 1 tsp
  • To finish, optionalSesame seeds, spring onion, lime, chilli flakes to taste

Method

  1. Cook the noodles. Prepare the rice noodles according to the packet instructions, then drain and set aside.

  2. Sear the salmon. Heat 1 tsp of avocado oil in a wok or large pan over high heat. Add the salmon chunks and cook for 2 to 3 minutes, turning gently, until just cooked and golden. Remove carefully so the pieces stay whole.

  3. Stir-fry the vegetables. Add the mixed vegetables to the hot pan with the garlic and ginger and stir-fry for 3 to 4 minutes, until tender but still crisp.

  4. Combine and serve. Add the noodles and soy sauce, toss for a minute, then gently fold the salmon back through so it stays in pieces. Finish with sesame seeds or spring onion, and eat slowly to gauge fullness on a reduced appetite.
