Ingredients · makes 1 serving

  • PeppersTops cut off and deseeded 2
  • Lean lamb minceLow-fat 150 g
  • Rice, dryOr use pre-cooked · about 120 g cooked 70 g
  • Onion and garlicFinely chopped ½ · 1 clove
  • Chopped tomatoesA few spoonfuls, to bind the filling 100 g
  • Spices and herbsCumin, paprika, cinnamon, oregano, or a mix 1 to 2 tsp
  • Avocado oilFor frying · high smoke point 1 tsp
  • To finish, optionalA little feta, fresh mint or parsley, a spoon of Greek yoghurt to taste

Method

  1. Cook the rice. Cook 70 g of rice according to the packet instructions, or use pre-cooked rice to save time.

  2. Make the filling. Heat 1 tsp of avocado oil in a pan over medium heat. Soften the onion for 3 to 4 minutes, add the garlic and spices, then the lamb mince, breaking it up and cooking until browned. Stir in the chopped tomatoes and cooked rice, and simmer for a few minutes into a rich filling.

  3. Stuff the peppers. Heat the oven to 190°C (375°F). Sit the deseeded peppers upright in a small dish and spoon the lamb and rice filling into each, packing it in gently.

  4. Bake. Cover loosely with foil and bake for 25 to 30 minutes, until the peppers are soft. Add optional feta for the last few minutes if using.

  5. Serve. Finish with fresh mint, parsley, or a spoon of Greek yoghurt, and eat slowly to gauge fullness on a reduced appetite.
