Chicken Caesar Salad

A lighter take on the classic: grilled chicken over crisp romaine with a creamy yoghurt Caesar dressing. High in protein, satisfying, and much lighter than the restaurant version.

Why this works on GLP-1

A Caesar salad is a protein-forward classic, but the traditional dressing is heavy with oil and mayonnaise. This version keeps the creamy, savoury, Parmesan-rich flavour while building the dressing on Greek yoghurt, which cuts the calories and adds a little more protein. On GLP-1 medication that is a smart swap, since appetite is lower and protein helps protect lean muscle during weight loss.

Grilled chicken breast carries a strong protein total in a modest portion, and crisp romaine keeps it fresh. Skipping or scattering just a few croutons keeps it light without losing the spirit of the dish.

Ingredients · makes 1 serving

  • Chicken breastOne skinless fillet 150 g
  • Romaine lettuceChopped · or little gem 1 head
  • Greek yoghurt0% · the base of the dressing 2 tbsp
  • ParmesanGrated, plus a little for the dressing 15 g
  • Dressing extrasLemon juice, Dijon mustard, garlic, a dash of Worcestershire, anchovy optional to taste
  • Avocado oilFor cooking the chicken · high smoke point 1 tsp
  • To finish, optionalA few wholegrain croutons, cracked black pepper to taste

Method

  1. Cook the chicken. Season the chicken breast. Heat 1 tsp of avocado oil in a pan over medium-high heat and cook for 5 to 6 minutes per side, until golden and cooked through with no pink remaining. Rest, then slice.

  2. Make the dressing. Whisk the Greek yoghurt with a little grated Parmesan, lemon juice, Dijon, crushed garlic, a dash of Worcestershire, and black pepper. Add a mashed anchovy for the classic savoury depth if you like. Loosen with a splash of water.

  3. Toss the salad. Put the chopped romaine in a bowl and toss with most of the dressing until lightly coated.

  4. Assemble and serve. Top with the sliced chicken, the remaining dressing, and the grated Parmesan. Add a few croutons if using, and eat slowly to gauge fullness on a reduced appetite.
