Chicken & Lentil Salad
A hearty, protein-rich salad of tender chicken and earthy lentils over spinach. High in protein and fibre, filling but light, and easy to prep ahead.

Ingredients · makes 1 serving
- Chicken breastCooked · grilled, poached, or leftover roast 150 g
- Cooked lentilsGreen or Puy · tinned and drained, or pouch 150 g
- SpinachFresh, as the base a couple of handfuls
- TomatoesChopped, or a handful of cherry tomatoes 80 g
- CucumberDiced 80 g
- VinaigretteWalnut oil, red wine vinegar, mustard, garlic 1 tbsp
- Avocado oilIf cooking raw chicken · high smoke point 1 tsp
- To finish, optionalRed onion, fresh herbs, a little feta to taste
Method
Prepare the chicken. If using raw chicken, season it and cook in 1 tsp of avocado oil for about 5 to 6 minutes per side, until cooked through with no pink remaining. Rest, then slice. Skip this if using leftover or pre-cooked chicken.
Make the vinaigrette. Whisk the walnut oil, red wine vinegar, a little mustard, and crushed garlic. Walnut oil works beautifully here as a finishing oil, adding a mellow, nutty note.
Combine the base. In a bowl, toss the spinach, lentils, tomatoes, and cucumber with most of the vinaigrette.
Top and serve. Lay the sliced chicken over the top and drizzle with the remaining vinaigrette. Finish with red onion, herbs, or a little feta, and eat slowly to gauge fullness on a reduced appetite. It keeps well chilled for a day.
