Chicken Quinoa Bowl
A balanced, high-protein bowl of roasted chicken, fluffy quinoa, and charred vegetables. Wholesome and filling, and easy to portion for a smaller appetite.
Why this works on GLP-1
This bowl pairs lean chicken breast with quinoa, one of the few plant foods that is a complete protein, so you get a strong protein total from two sources. On GLP-1 medication that matters, since appetite is lower and protein helps protect lean muscle during weight loss.

Ingredients · makes 1 serving
- Chicken breastOne skinless fillet 150 g
- Quinoa, dryRinsed 70 g
- CourgetteDiced 80 g
- PeppersAny colour, diced 80 g
- Avocado oilFor roasting · high smoke point 1 tsp
- SeasoningPaprika, garlic, salt and pepper, or your favourite blend to taste
- Additional veg, optionalRed onion, cherry tomatoes, aubergine, whatever you have to taste
- To finish, optionalLemon, fresh herbs, or a spoon of Greek yoghurt to taste
Method
Cook the quinoa. Rinse the quinoa, then simmer in about 150 ml of water for 12 to 15 minutes, until the water is absorbed and the grains are fluffy. Fluff with a fork and set aside.
Roast the vegetables. Heat the oven to 200°C (400°F). Toss the courgette and peppers (plus any optional veg) with the avocado oil and seasoning, spread on a tray, and roast for 18 to 20 minutes, until tender and lightly charred.
Cook the chicken. Season the chicken breast and either roast it alongside the veg for 18 to 20 minutes, or pan-cook it for 5 to 6 minutes per side, until cooked through with no pink remaining. Rest for a couple of minutes, then slice.
Build the bowl. Spoon the quinoa into a bowl, add the roasted vegetables, and top with the sliced chicken. Finish with a squeeze of lemon, herbs, or a spoon of Greek yoghurt. Eat slowly to gauge fullness on a reduced appetite.
