Ingredients · makes 1 serving
- SalmonSushi-grade, cubed · or cooked/smoked salmon 130 g
- Edamame beansShelled · adds protein and fibre 60 g
- Rice, drySushi or brown · cooked and cooled slightly 60 g
- Cucumber and carrotDiced or ribboned 100 g total
- AvocadoSliced ¼
- DressingLow-sodium soy sauce, rice vinegar, sesame oil, a little grated ginger 1 tbsp
- To finish, optionalSesame seeds, spring onion, nori strips, chilli, lime to taste
Method
Marinate the salmon. If using raw sushi-grade salmon, cube it and toss with half the dressing. Let it sit while you prepare the rest. If using cooked or smoked salmon, simply flake or slice it.
Cook the edamame. Cook the edamame in boiling water for 3 to 4 minutes, then drain and cool. Have the rice cooked and cooled slightly.
Prep the vegetables. Dice or ribbon the cucumber and carrot, and slice the avocado.
Build the bowl. Spoon the rice into a bowl and arrange the salmon, edamame, cucumber, carrot, and avocado on top in sections. Drizzle with the remaining dressing, finish with sesame seeds and spring onion, and eat slowly to gauge fullness on a reduced appetite.
