Smoked Salmon Wrap
A light, elegant lunch you can roll up in two minutes. Smoked salmon, light cream cheese, and peppery rocket in a wholemeal wrap.

Ingredients · makes 1 serving
- Smoked salmonSliced 80 g
- Wholemeal wrapOne large tortilla 1
- Light cream cheeseTo spread 1 tbsp
- RocketA generous handful a handful
- CucumberSliced or in batons 1/4
- Lemon and pepperA squeeze of lemon, black pepper, easy on salt to taste
- To boost protein, optionalA little more smoked salmon, or a boiled egg on the side to taste
Method
Spread the base. Lay the wrap flat and spread the light cream cheese evenly over it, leaving a small border at the edges. Add a squeeze of lemon and a grind of black pepper.
Add the filling. Layer the smoked salmon down the centre, then top with the rocket and cucumber.
Roll and serve. Fold in the sides, then roll up tightly from the bottom. Slice in half on the diagonal, or wrap in foil to take with you. Eat slowly to gauge fullness on a reduced appetite.

Makes one serving. Smoked salmon provides most of the protein, with the wrap and cream cheese adding more. Adding extra salmon or a boiled egg brings it to around 30 g. Smoked salmon is high in sodium, so keep added salt to a minimum.
