Thai-Style Chicken Skewers with Green Papaya Salad
Fragrant chicken skewers served with a crisp green papaya salad and a fresh lime dressing. A colourful, high-protein lunch with approximately 40 grams of protein.

Ingredients · makes 1 serving
- Chicken breast Cut into bite-sized pieces 150 g raw
- Reduced-sodium soy sauce For the chicken marinade 2 tsp
- Lime juice Divided between the chicken and salad 2 tbsp
- Fresh ginger Finely grated 1 tsp
- Garlic Crushed 1 clove
- Sesame or avocado oil For cooking the skewers 1 tsp
- Green papaya Peeled and finely shredded 150 g
- Carrot Peeled and shredded ½ medium
- Cucumber Cut into thin strips ½ small
- Cherry tomatoes Halved 5
- Fresh coriander and mint Roughly chopped 1 small handful
- Fish sauce Use sparingly in the salad dressing 1 tsp
- Honey Balances the lime dressing 1 tsp
- Roasted peanuts Roughly chopped 10 g
- Chilli Finely sliced, optional to taste
Method

Marinate the chicken. Mix the soy sauce, 1 tablespoon of lime juice, ginger and garlic. Add the chicken and coat well.

Prepare the skewers. Thread the chicken onto skewers. Soak wooden skewers in water first if needed.

Cook the chicken. Heat the oil in a griddle pan or frying pan. Cook the skewers for 8 to 10 minutes, turning regularly, until fully cooked.

Make the dressing. Mix the remaining lime juice with the fish sauce, honey and chilli.

Prepare the salad. Combine the shredded papaya, carrot, cucumber, tomatoes and herbs.

Dress the salad. Add the dressing and toss gently. Sprinkle over the chopped peanuts.

Serve. Place the cooked chicken skewers alongside the green papaya salad and serve immediately.
