Turkey Stuffed Courgettes

Tender courgette halves filled with savoury turkey in a rich tomato sauce. High in protein, low in calories, and a satisfying way to get more veg on the plate.

Ingredients · makes 1 serving

  • CourgettesHalved lengthways, centres scooped out 2
  • Turkey mince, lean93% or 99% lean 150 g
  • PassataOr tinned chopped tomatoes 150 g
  • Onion and garlicFinely chopped ½ · 1 clove
  • Dried herbsOregano, thyme, or Italian mixed herbs 1 tsp
  • Avocado oilFor frying · high smoke point 1 tsp
  • Fresh coriander, optionalTo finish to taste
  • To finish, optionalA little grated cheese, or a spoon of Greek yoghurt to taste

Method

  1. Prepare the courgettes. Heat the oven to 200°C (400°F). Halve the courgettes lengthways and scoop out the centres to make boats, keeping the scooped flesh. Place the halves on a lined tray.

  2. Make the filling. Heat 1 tsp of avocado oil in a pan over medium heat. Soften the onion for 3 to 4 minutes, add the garlic and the chopped courgette flesh, then the turkey mince, breaking it up and cooking until no longer pink.

  3. Add the sauce. Stir in the herbs and passata, season, and simmer for 5 minutes until thickened into a rich filling.

  4. Stuff and bake. Spoon the turkey filling into the courgette boats. Bake for 20 to 25 minutes, until the courgettes are tender and the filling is bubbling. Add optional cheese for the last few minutes if using.

  5. Serve. Finish with fresh coriander or a spoon of Greek yoghurt, and eat slowly to gauge fullness on a reduced appetite.
