Mozzarella & Tomatoes
A fresh, Italian-style caprese snack. Creamy light mozzarella and sweet cherry tomatoes, with a little parma ham for extra protein and flavour.

Ingredients · makes 1 serving
- Light mozzarellaReduced-fat, drained and sliced or torn 100 g
- Cherry tomatoesHalved, or sliced tomato 100 g
- Parma hamA slice or two · adds protein and flavour 1 to 2 slices
- Fresh basilA few leaves to taste
- Black pepperEasy on salt, the cheese and ham are salty to taste
- To finish, optionalA drizzle of walnut oil, a little balsamic to taste
Method
Slice the mozzarella. Drain the light mozzarella well and slice or tear it into pieces. Halve the cherry tomatoes.
Arrange. Lay the mozzarella and tomatoes out on a plate, alternating them, and drape the parma ham alongside or in ribbons over the top.
Finish and serve. Scatter over the basil leaves and a grind of black pepper. Add an optional drizzle of walnut oil or a little balsamic, and eat slowly to gauge fullness on a reduced appetite.
